He is a bit of a perpetual motion machine. I discovered him on seriouseats.com. He has one cookbook, “The Food Lab” based on his forays on seriouseats.com. He is credited with developing the reverse sear method of cooking meats. Several years ago he opened a restaurant in the Bay Area, Wursthall. Has some interesting quirks like not including dessert recipes in “The Food Lab” because he doesn’t like desserts except apple pie. I have tried many of his recipes and the only one that didn’t turn out perfectly was his fried chicken.
Put in my order for tomorrow. Very excited. The lady on the phone was very nice and helpful. They can take your credit card ahead of time so you don’t have to do any payment at the store.
