Sea Urchin

Pretty much in favor of everything but meringue and MSG.

I’m hoping interest in clarification will keep Booker and Dax afloat with their improved centrifuge but anecdotally it seems like a lot of the fervor around craft cocktails isn’t where it was a few years back. Not like there’s no interest or effort but bar programs seem to have scaled back recently…?

I predict the biggest restaurant trend will be more insane service charges. Line items for the restaurant’s water, condoms, babysitters, exterminators, etc. Each will have a line item on the bill.
