Interesting! I haven’t order from Lugyah yet, but I did get notification via email from the other stands my order was ready. I know that Lugyah is among the busiest of stands, so there isn’t typically some obviously there to take your order like at the “Holy Basil” stand.
Maybe because I paid on apple pay and it didn’t take my name or number to alert me that it was ready

Reading back on your post, I can see how maybe that could be something specific to Lugyah, because yeah, they do a fair amount of prep at the Hearth (In fact my friend who sat there and had the Maydan menu, wanted to try the Lugyah menu next time because of the impressive show they were giving) that for some reason they aren’t closing out at the POS at the stand. Their stand is also in the most tucked in corner, which is a shame.
I do plan to try them soon, I’m not shy, 
so if the same thing happens, I’ll ask them about it.
