Chili Crisp Recommendations

There is seaweed, which is a natural source of MSG.

It’s sort of like using celery powder instead of nitrites.

Does “restaurant grade” mean anything?

Other than it was probably developed for use in his restaurants it’s just marketing

I wonder if the Momofuku chili crunch really needs to be refrigerated after opening. None of the ingredients seem like they would make that necessary: Maybe it would go rancid if you didn’t eat it up in a few weeks.

grapeseed oil, puya chilis, coconut sugar, onions, garlic, sesame seeds, japones chilis, chilis de arbol, mushroom powder, salt, shallots, spices, yeast extract, seaweed

I hope not. We haven’t refrigerated the Momofuku chili oil since opening months ago and we dip into weekly depending on what we are eating.

I think it’s odd to refrigerate oil based condiments. If I die of suspected food poisoning due to the unrefrigerated Momofuku chili crunch I’ve instructed my wife to log into FTC and post on this thread to sound the alarm.

This came with my Momofuku order. I’m not sure how one would use a wooden spoon with its own carrying bag.

clearly you are expected to use it everywhere you go.

Has anybody tried this? I like the Majordomo chili crunch but I need more heat. Same with the Lao Gan Ma. They both have great flavor but I tend to eat spicy. Any recommendations on spicier chili crisps?

This one is good as hell, and very spicy. More flakes, no oil tho. Super good on pizza (as proven by Quarter Sheets).

This sounds like it might be good.

Can confirm that it’s good. Goes over well when guests come over and have some vegetables and bread to swipe it up.

Got my hands on some Fly By Jing at a east coast supermarket chain.

Any try it with vanilla ice cream?

The zhong sauce is pretty damn good too. Umami, slightly sweet, with a little kick to it.
