They discuss the business of tomatoes including sourcing, pricing, and a whole host of other neat things to know about the American tomato market. Their guest expert is an exec from a distributor named Baldor, which seemingly specializes in more premium produce for which they mainly focus on supplying restaurants.
Thought I’d share for anyone who might be interested in the business side along with some neat factoids (like apparently the costs of romaine and avocado shooting up).
