Chef Johnny has always treated me well. I don’t even know if he recognizes me 
. But sure feels like he’s spotted an old friend. All their staff treat every single person special, better service than any fine dining restaurant around.
I remember that I visited his pop up truck, before he finalized the Chinatown location. The taste of the spice changed. I think it used to taste closer to the so-called authentic Memphis seasoning, and more chili oil. Now it caters to the tastes of the masses. Smart move, if you think of it in a product development way.
My friend, who was a regular at La Poubelle, also recalls the days he was in charge of the kitchen. Never heard a bad thing to say about him. Looking forward to their Pasadena location. Line will probably be longer than ever after this.

Curious about how will they’ll handle the crowds?
They’re going to post their rules to the folks who sign up on the Vault Society mailing list. I imagine it’ll be a lot like the Tock set-ups throughout the city to help with crowd control.

Agreed. Maybe a 2-4 picks up every 5 minutes and once all the slots are taken they are sold out.

I would do a virtual line a la many beer drops and curbside pick up.
But how would you eat that in the car 
, need some PPEE (personal protective eating equipment) just for that daunting task.
