In-n-Out fries question

So I really like the burgers at In-n-Out but find their fries mediocre ( due to their small size) even when I order them medium well so they’re a bit crispy. My question is whether anyone here has any true facts about WHY they tend to be so small. I know they cut them on site, from fresh potatoes, and have assumed that they use smaller potatoes to keep the price down. I just don’t know if that’s right or even makes sense (a pound is a pound). Anyone know for sure?

ChatGPT says it’s because they’re fresh and cut on site, but suggests that labor costs may make them more costly actually. I guess I’ll just have to keep find them annoyingly small.

Two things.

They are all cut onsite. They aren’t properly rinsed nor prepared. The potato size has to be pretty uniform to fit into the cutter and also to be easy to cut without too much resistance. You can imagine the injuries that would accompany big potatoes at such scale.

Second, they are not double fried. They are fried pretty much after a short rinse and that essentially is why they are gummy and gross. You can ask for extra crispy but that makes them even worse IMHO.

Luckily Win-Dows burger is not much more expensive and much tastier and they have better fries. I recently went to Mom’s list in Culver City and got their Messy Momma . OMG. My new favorite thing. Legit LARGE fresh cut and made fries. Not a bad price either!

They don’t get enough starch out of the fries and no blanching or initial frying.

I have found light well to be the best tasting but yeah they aren’t great. A lot of times I will just order an extra cheeseburger instead

I guess my question is more about WHY they make them that way if most people find them inferior. CIf it’s not a cost think I can only assume that either most people DON’T find them so bad, or that Lynsi Snyder is as adamant about continuing to make them the freshest way as she is about most other things.

I have grown to really like In-n-Out fries, as has Mrs. Sk8uno. Unpopular opinion, I know.

I don’t mind them either and don’t go out of my way to order them extra done either.

Presumably most In-N-Out regulars don’t care whether the fries are good

I’m sure that’s all true. I just find most of them too small to be able to enjoy their freshness. I often think of buying my burger there and getting the fries at Five Guys (as long as they don’t close the bag which makes them get soggy). Of course I think the Five guys fries cost more than the In-n-Out burger. :roll_eyes:
