I’m curious as to how PRD can scale with a very limited number of stoves in their small kitchen. Typically, doing claypot rice is very time consuming where each claypot may take 20 to 30 mins of cook time but ours came out in minutes. As for the claypot rice itself, it would also be nice if the rice, the essence of the dish, is cooked with a little less water since ours came out a touch wet and soft.
The fat ratio is off the charts. Skin was properly ethereal and crunchy for days. Truly well done. But being how rich this dish can be, it would be nice to pair it with a little bit of Chinese mustard on the side so there’s an option to cut down on some richness.
while I understand your extraordinary enthusiasm and support for the other restaurant, it is completely inappropriate to lump them together in this discussion, whether here or on other social media platforms. Not to mention they are two completely different restaurants. And it makes me legitimately wonder why the need to compare or inject them at every turn, rather than let my review of one establishment stand. It comes across as putting down prd when you do that, and make me further wonder if there are other intentions beyond that enthusiasm.
C’mon fellas. This is now going a bit too far. Beefnoguy has been a solid contributor. He visits us here in LA from NorCal, does a great job of covering our eating scene during his trip here, giving us his perspective. His knowledge of Japanese food, Cantonese food and of the Bay Area scene, as well as his sake takes are unparalleled on this board. Look, we can all get a bit testy at times when reading some of the posts on this board. But I think we owe it to Beefnoguy to give him a pass on giving JKB a hard time (and to his credit, JKB has been a true gentleman in his responses). Let’s not turn this into another mosquito-gate by belittling a respected FTC (and old school Chowhound) poster, all for a new inside joke. I, for one, will apologize to beefnoguy if I’ve offended him in any way.
Here here beef has been nothing but helpful and gracious to me when answering my questions and a great contributor to the board.
Hopefully all of us are able to poke a little fun at each other and laugh it off. If beef or anyone was offended by my teasing I sincerely apologize.
I however do enjoy a lighter teasing and joking tone on ftc as opposed to a serious elitist one, since we are basically just a bunch of gluttonous nerds talking about what we ate or what we are going to eat after all.
I mean the following respectfully (to you): IMHO, his response was not just “a bit testy.” We’ve certainly seen lots of people write a few snarky/irritable/whatever sentences in the heat of moment (and I have done that myself).
But dude basically wrote what amounted to a novella (by internet-forum standards) irrationally ripping into both a poster and a restaurant (and second poster).
There’s no reason he can’t continue to post here, if he wishes. And if he posts the stuff that he usually does, I’m sure no one will have a strong reaction.
Do I think posters can (and perhaps even should) lay off on the teasing? Sure. But I think the teasing should stop b/c no one should be teased (and not b/c beef is more deserving of respect than is anyone else). I don’t think anyone “owes” him anything.
But if he starts posting sh*t like that he did in that other thread, then other people might have an understandably negative reaction and might be quite expressive about it.
You’re not old. FK is delicious (love the handkerchief pasta & porchetta) but it is the noisiest restaurant I’ve been to in L.A… that’s saying a lot. Hard tables? Bad acoustics?
A little taste of 24th and Folsom! Guilty pleasure because for the same price I can get a pour over or an espresso based with better beans. I’ll take Philz over Sbux any day
I’m not sure why anybody goes to Starbucks other than convenience bc the coffee is average at best. Even in Brea we have better options like Reborn or Bodhi Leaf within a 5 minute drive. Drive 15-20 minutes and you can get Portola, Philz, Kaffeine Alley, Keans, Hopper & Burr, Dripp and Contra to name a few.
Since you’re in north OC, you might be interested Play Coffee in downtown Fullerton. I believe they opened during the pandemic. They carry a lot of international roasters.
