Keeping Cantonese cooking alive.....Pearl River Delta/Deli and Needle

I have been there and have had their really good chicken wings… had not thought of ordering the whole chicken… will check them out for sure!

Agree, the amount of flavor they get into the chicken is insane.

The one thing about Isaan station is I find their spicing to be (a) inconsistent and (b) potentially explosive. Sometimes medium is a nice steady heat. Other times it will wreck you for days.

It’ll be interesting to hear back if this differs from what my parents made out of a package in my youth…

Dude! That gyudon looks fabulous

Corn and fish is quite classic too with lots of variation even if just google image search for 粟米班塊 (some fish are fried then cooked again with corn sauce and some are done in a way where the corn is coated like a breading). White pepper or a little Maggi sauce makes it more fun too.

Edit: oh that’s exactly what he’s making, I thought it was corn, pork, and onions version.

:kissing_heart: missed u guys. what a shame last time I wrote here I was hoping to meet some of y’all, instead I can’t meet anyone. You can still pick up from needle tho here’s some BTS, will add descrips in edit Im uploading from my phone

chu know we had to do the bang-bang-bang with the ruby meats (duck and chicken, sold out of siu yuk at 7pm bc of course they were) and the bistro na’s

duckburger: ah yes that bread, this was definitely a cheat day for me (i’ve been losing a little weight). fantastic and labor intensive as hell as always. shrimp chips in the burger: strong move. you can also buy them separate, and they are fried to order. the duck meat was soft, had a decent crumble but gaminess not as forward as I would have liked for the idea (it strongly resembles a duck bun with the hoisin, but is more just a fun, tasty thing to eat). could use a little bit more gamey/fatty flavor but I still enjoyed it.

pork chop bun: glad chef ryan went a little smaller on the pork chop to give the bread some more play (i think before the chop itself was a lil too big). that bun is really something else, as you might be able to see here. of course the pork chop, taut, perfectly executed, gone in like 4 bites because i was friggin hungry

dried stir-fried green beans: great wok work here as per yoosh. ryan just knows his way around a wok. good bite on the bean, nice dry fry, not too oily as this dish tends to be at other places I’ve had it.

almond jello with cara cara oranges, seasonal fruits and lychee jelly: it’s like almost always sold out so just call ahead, obviously a great dish with this heat we’re having. the oranges absolutely make this dish, it’s really nice being able to have such good citrus in summer… a rare pleasure

That Na’s spicy chicken is one of the city’s great chicken dish IMO. The flesh is silky and juicy af with just a bit of a kick from the chili oil.
