@mzonelli episode 2 of this show follows your boy Jake opening up Feld (also chef Norman at Cariño). Liking this show so far, will be interesting to see the Esmé portion in ep3, maybe the worst meal I’ve had in Chicago.

Specifically, how much money his Santa Monica, Calif., restaurant, Pasjoli, was bleeding after losing its Michelin star in 2022. In one scene, his chief operating officer, Ann Hsing, tells him the restaurant is in the red, even though they’re charging $65 for a single entree. In another, he says losing a star cost Pasjoli 30 to 40 percent of its business.
At the end of his episode, Mr. Beran decides to pivot Pasjoli away from Michelin and toward being a neighborhood restaurant. “It was becoming a restaurant I frankly couldn’t afford to go to on a regular basis,” Mr. Beran said in an interview.
Of stars, Mr. Beran said, “The times we’re not trying to get one, we do. When I say it’s the only thing that matters, we don’t.”
And if Seline doesn’t get a star next year, would it have to close? “Oh yeah, probably,” he said.

I found the host intolerable. Had to stop after a minute or two.
i was surprised how grating i found him, given that i find much of his topjaw youtube content relatively watchable.. seemed like they tried to graft early 2000s-era gordon ramsey show dialogue onto his presentation
gave the show a shot because of harbor house but yeah the host, narration, music, misshapen storylines, tone, etc. leave a lot to be desired… almost a shame to give this level of access to end up a product like this - though I’m sure the subjects have their reasons. hopefully they can pull it together if they get another season, but this production team doesn’t seem to have nearly the sense… not even sure it works as reality tv. back to the old eater omakase videos…
