Was at holbox last night and peeped the menu for this posted on the wall and should’ve taken a picture oops. But judging by how little seating there was on a Tuesday at 8PM with Holbox there’s not going to be a lot of space to eat oof
Thought it was good as hell. Not too crowded for lunch today. Simple dishes, straightforward ideas but super comforting and the masa is really awesome.

Had the Taco Sonia, Tlacoyos, and a flor de calabaza quesadilla. Everything was great but I think the taco was my fav - the tortilla rules and so does that longaniza. Still curious about the molotes too.

She makes the tortillas on the cart while you wait! Straight from the dough (masa ball?) I went to look for her after seeing the threads and realized I’d been walking past her a bunch of times already.
Eventually JĂşarez and Rivera hope to expand not only their hours of operation but their menu: In a few months they expect to debut a weekly tasting menu where crickets, ants and other ingredients less-utilized in the U.S. might be found topping variations of her masa.
“In those tasting dinners she’s gonna explore all the things that can’t be put on a daily menu,” Rivera said. Those dinners could even see collaborative dishes between Júarez and her Mercado La Paloma neighbor and mentor, Cetina.
What’s true for most pizza is also true for most Mexican food: it suffers from bland cheese. It’s hard for me to take this quesadilla seriously when the cheese has no flavor. I do like the cheese’s stretchy consistency, but it’s not enough to make this quesadilla appealing.
I think the squash blossom quesadillas at nearby Sabor Mexicano and Doña Inez have better flavor as well. Both places are within a couple of miles of Mercado Paloma— try them all out and decide. They all use fresh masa.
I’ve a hard time believing that the masa at Dona Inez is of the same quality as Komal’s. Did you get anything other than the quesadilla lol?
Just the quesadilla. I won’t vouch for masa quality, and I’m not even sure how to judge that except to look at the purple streaks in the Komal quesadilla and say: that looks legit. I just thought the whole thing, with the salsa, was bland and not something I would want to eat again.
@PeonyWarrior surely you’ve had good tortilla with great masa before? It’s why a Taco Maria (RIP) tortilla tastes better than a street vendor’s. Just like good bread versus bad bread. But fair enough on the bland dish.
On a related note, how bad was the line at Holbox?
Maybe it’s lack of experience. I definitely prefer tortillas made from fresh masa—that’s a huge improvement. But I find it hard to judge tortillas beyond that. I want to like darker / purple ones more because those are rarer and used by better restaurants (and they look cool). But the truth is, I can’t confidently say they taste better. The darker masa tortillas seem to taste less sweet / more earthy, which I’m not sure is positive. I definitely didn’t love the tortilla at Komal.
Anyway, I’m not sure what Holbox’s hours are, but there was a small line around 3:15 and no line around 3:45.
You can fake color in masa pretty easily. It all comes down to taste and texture, and not all darker/colored tortillas are better.
I feel one important factor is the fragrance of the masa which impacts the flavor while you are eating.
Tire Shop Taqueria seems to have a very fragrant yellow corn masa that I believe is one of the factors why their tacos are soooo delicious.
