Damn, it’s almost 2x the price of the OG at Spago… in Beverly Hills…pricing seems outta whack compared to the black truffle pizza (assuming it’s Australian winter truffles).

Does Spago use king salmon or smoke it themselves? Skenes’s sourcing is about as extreme as it gets.

They smoke the salmon in-house and use Wild Alaskan salmon

That’s from 15 years ago and the CDC said they “use Wild Alaskan salmon whenever we can,” which is an odd thing to say.

Even comparing within the Leopardo menu, it’s on par in price with the steak they serve and is quite a bit more than the lamb saddle. The price of wild caught CA King Salmon is $30-40lb retail from Wild Local at LA farmers markets, and they catch them sustainably. That’s cheaper than most high quality dry-aged steak that’s been raised well and you’re getting a lot less on your pizza. Of course they are doing a lot to it in-house, but that’s true of many of the things they have!

No, I was craving vegetables so went to HLAY.

They do not have the salmon pizza today, so we aborted and went to Meals by Genet.

They do have a new lobster cocktail though.

I’m also in solid agreement with that take too. I only get a pizza to feel full at the end.

They’re transitioning the pizza to a new concept and expanding the menu???

interesting. i didn’t even know they had a space next door. i wonder if this is where they’ll be serving their breakfast and lunch.

I wonder how they’re going to manage that, I doubt they’re moving the pizza oven over there! Or maybe they’re going to take over the oven for a higher volume of wood-fired foods.

We do know that in multiple visits they weren’t able to serve pizzas at the same rate as the rest of the food. They comped us a pizza once because we had to wait so long. I figure that is part of the reason for separating the two.

I’m into this. I think the pizza was the weakest part and I wanted more of the other dishes.

i guess yes but then i was told my meatballs also came with polenta which they didn’t :joy: i didn’t specify gordiniers post, just said i’d seen what looked like meatballs and polenta

all in all my strangest visit. Second time in a row I’ve been sat at Bar 1, last seat at the far end by the Tyson shorts.

Could be an aggressive solo diner policy but I was led past six or seven open seats, then a solo diner and one open seat, then a two top with me between them and the drink pass

Guy was even like i’ve got the perfect seat for you as he walked me past a view of the kitchen, then had to ask someone to move their bag.

maybe they’ve got scanners at the door that determine a diners ability to handle various visual and audio stimulation. Based on past visits and my current state it said I was capable of overhearing conversation but not of observing cali-prese assembly

Also there was no core in the garden lettuces. More a bummer than anything but logistically it makes sense. The core per salad ratio is probably .33 repeating, maybe even .25

Couldn’t be mad at that, more just like damn those kinda bites are my favorite

Common sense says they have a bucket of cores sitting around and all I need to figure out is how to track the whole situation so I know at what point in service to place my order.

The Clos Sainte Magdeleine kicked ass with the meatballs, same as my rum lemonade completing the coreless lettuces

the last few times something funny has happened when i solo dine. I had a long wait for steak once, i showed up on no dessert night another time.

We were there too for “we’re out of dessert” night. Or maybe they have multiple no dessert nights, I don’t know. All I know is I’m addicted to the whole experience.
