Nobody forced him to open the restaurant now if he continued to be unhappy with the oven after the repair/replacement. He should have kept the shop closed and optimized it if he is unhappy with the results. Now, he is burning through more money by throwing away/comp a lot of stuff and perhaps more importantly he is building a bad reputation for his restaurant. He might be a good chef but he seriously needs a business partner who has run restaurants and who can veto some of his actions.

I presume his backer(s) aren’t in it for the money.

That might be fine for food nerds who blindly follow him but restaurants survive by attracting the general population who couldn’t care less about it but want decent food within a decent timeframe

And surely you can put yourself in the position of someone who isn’t quite as enamored with his food. There are great pizzaiolos who don’t pull this: one of them happens to cook in LA and contribute to this board.

Long term you will be less likely to eat Skenes food if you accept this bs, since he’ll go out of business.

*Like many things on this board, we’re litigating larger issues, but I don’t think genius (I’m skeptical Skenes is but stipulating anyway) means accepting this.

said with love, you are someone who eats out with frequency. You have been to this place 3 times already. When your trips to restaurants are more limited and you have an experience like I did - it doesn’t matter how much you love it. And - the food was definitely good but it blows my mind that yall think it was worth repeat visits so soon after opening.

Is the pizza I made at home nearly as good last night? No. Sure it’s a nice lil sourdough 3 day ferment and ingredients from the farmers market. Maybe if I threw my first 6 out the 7th would have tasted better.

Saison and Angler SF certainly didn’t / don’t. Angler LA, Leopardo, and Happies didn’t survive, but apparently Skenes’s backers have other priorities, god bless them.

There’s an episode of the Dave Chang Show where he and Chris Ying roast the hell out of Skenes, who’s a good sport about it. Pretty funny if you’re in the right demographic.

Josh Skenes is the Nathan Fielder of restaurants. It’s all an elaborate prank, and it’s fine to participate as long as you keep that straight in your mind.

It’s all part of his master plan! Closing just builds the hype, new staff demonstrates how he demands perfection from his chefs. Skenes is a savant lol!

It’s not that serious and no vitriol intended, but it’s perfectly reasonable for people to speculate given his track record.

Restaurants in general, and his specifically, benefit from this board, these tempest in teapots included.
