Manzke Restaurant

To me their version of dynamic pricing rewarded people who aren’t concerned about a discount in the first place. Someone with time to do a tasting menu Tue-Thu probably isn’t being swayed specifically because it was cheaper than the weekend.

I’m more surprised Resy, Tock etc or restaurants themselves aren’t advertising some form of Dorsia.

Yeah I doubt that would work.

I think a seat license or preferential bookings for prime dining times might be viable for the hottest restaurants.

Before they axed the concept I floated the idea of a $30 per person “Dynamic Dining Fee” added to all the checks

Anyways…here’s some supporting evidence that this may be true.

Per Manzke’s website, reservations are released 2 months in advance. March reservations should have gone live on February 1.

But OpenTable has no reservations past February 29th.

Man. One of the best cocktail programs gone now.

The original Reddit post has been deleted and the host at Republique has no knowledge of Manzke/Bicyclette closing (they might not be read in directly, but you would think word would get around). :man_shrugging:

I don’t get how a restaurant so packed with people could not be profitable. I was just talking to a sommelier in Palo Alto about how his favorite LA restaurant is Bicyclette. I don’t get this industry. So much weird drama. Meanwhile maybe Somni and Vespertine are opening back up? God knows why they closed to begin with. Didn’t everyone love Broken Spanish? Etc. etc.

Somni, Vespertine, and Broken Spanish all closed due to Covid. Vespertine apparently has a unique relationship with its landlord. Somni’s not reopening in the same location.

They had to hold on to the Pico space and République for a year during COVID. I wonder if that put them in a hole that was just too deep?

I’d also guess that they might be hitting higher interest rates on loans they took to open Bicyclette and Manzke. Those were pretty expensive build outs with a lot of inventory to acquire (e.g. the wine cellar and vintage spirits). Costs are higher across the board and getting squeezed by loans renewing at our current much higher interest rates might be the final straw depending on how their loans are structured.
