I meant the diner. I guess Patty melts and milk shakes?

It’s not known for anything at the moment as it’s not open yet.

On David Chang’s podcast he and Silverton talked about how her milkshakes were bad at first because the ice cream she was using was too good. She ended up switching to Thrifty.

Huh. Is that a known thing that good ice cream makes bad milkshakes?

I could imagine most good ice creams have less stabilizers in them. For example a Van Leeuwen or even Hagen Das use eggs instead of other stablizing powders. Maybe the blending/milkshaking of these can cause things to be the wrong texture for drinking

That makes sense.

Since it’s almost Thanksgiving it kinda reminds me of green bean casserole. Tried to make a home made version for a few years but realized that nothing beats the cream of mushroom soup recipe.

Can’t be that known a thing if she started off using good ice cream in the first place

Chang’s explanation was something like that. He’d learned it already somehow.

So no sides with the patty melt? Yet the cheeseburger comes with fries for the same price? The patty melt looks like the most expensive sandwich by far which I assume all don’t come with sides, I’m not sure what the rationale is.

I agree with you that pricing feels out of line considering Chi Spacca sells their burger for $20 and surely the ingredient quality is the same or better. It is substantial and delicious. I expect they will sort things out over time… or sell much fewer patty melts. If the value comparison is a cheeseburger + fries for the same price as a patty melt with no fries and a pickle, it’s not much of a choice.

Melrose Smash Burger
Two 3 oz. smash patties made with our dry-aged beef, American cheese, Calabrian chili aioli, shredded lettuce, tomato, grilled onions & pickles on a toasted sesame seed bun. $20

Selling merch/goods is hardly a novel concept?! Especially for “diner for all” type places
