Had to make a random trip into town on Sunday so had to stop by Sei. Walked in at open and luckily got a seat at the counter. Filled up pretty quickly after. Noticed a new special - A white pizza called Ruti’s Pizza. The server started his description comparing it to the Diavola.

The honey is added on top of the arugula. It’s a nice mix of sweet, spice (from the sausage), and creaminess. I normally prefer tomato sauce but this was really good!

Also got a Marinara which was excellent! I normally get Margherita but I was craving a Marinara and this more than hit the spot! Also light enough for me to embrace my inner Porky and eat two whole pizzas by myself. :laughing:

I would check with Huntington Meats at Farmers Market (3rd/Fairfax) or Standings Butcher. They both have a larger selection and variety of sausages. I’m not sure if you will only find mergez vs any other type of lamb sausage.

Just bought some merguez from eataly, they have fresh house made and a fully cooked from Brooklyn Cured. Surfas also carries merguez, a couple different brands with their frozen meats

what kind of sausage does the lamb sausage at Pizzeria Sei have? is it Merguez?

doesnt taste like merguez to me

I tried to look around online and he gives a shout out to every ingredient on the pie except the sausage, so maybe it’s something he does in house?

Edited to add: Wonder if he is mainly adding the XXHeat chili powder to ground lamb with some additional flavorings. I bet that might get you most of the way there! You might also DM them and ask, worst that happens is they won’t say :slight_smile:

Beverly Hills Kosher Meats I think makes lamb sausage. Try Rabbi’s Daughter also (another kosher butcher).
