From my NELA outpost it’s 26 min to the current and future Sei. Unsure what will happen during traffic though.

Resy notification success!

Got a notice for an open 2PM slot yesterday and rolled in after a snack fail in Chinatown.

It’s a well-oiled machine here now with a packed house. Sergio was in the house but not working the kitchen and quality remains superb.

I love the umami-packed Caesar salad here.

Funghi crostini - this is a generous starter…I’d be okay if the bread was sliced thinner because I was already starting to be full after 1 full crostini. The meaty mushrooms are roasted and lovely, while the bread soaks up the olive oil and balsamic splash from the bottom of the plate.

Patate - my companion said it best…it’s like having scalloped potatoes on pizza and I can only imagine a dallop of caviar on top would be wild!

Mala lamb sausage - I’ve been curious about this pizza since it debuted, and am so glad to have finally tried it! It’s the most beautiful but also most flavorful pizza I’ve ever had…loved the subtle heat that builds and numbs and the bright, punchy tomato bursts and drops of lemon…all atop one of best pizza dough/crusts I’ve had.

They’ve got a nice yuzu cocktail if you need something to help cut the richness of the meal. Can’t wait until the next time I can come in.

Any tips to on immediate post pick-up reheating?

Preheat a pan with even heat distribution on medium heat for four minutes, then reheat the pizza for four minutes.

Does that ever make your crust tough?

I’m partial to the Roberta’s method, skillet and steam. For me it sometimes improves Neapolitan pizza, crisping the bottom while maintaining its airy structure.

It will crisp up the crust but I haven’t had it get tough.

For pizzas this size, I often ask them to not cut them for take out orders. Then I toss onto the oven on a rack or if it fits in the toaster oven.

It was from Epicurus, the guy told me they switched their black truffles over a mix-up this time,
and they were the better quality ones for the price of the originals, but I have no clue what type! Sorry
