The top 3 in the US is pretty set in stone these days. Una does not miss and you can see Anthony in the kitchen every night. Pizza marumo is fantastic and one of the best really and what’s most important is that when Yuki leaves Tokyo the restaurant is closed - consistency is the foundation. Overall, the biggest issue anywhere you go with pizzerias is the constant consistency.
A L’Industrie burrata slice is probably the best single slice though. Have not tried Stretch Pizza but Wylie Dufresne went from gastronomy king of NYC with wd~50 (I believe also my first Michelin star experience) to world class pizza chef.. good for him, especially since his donut shop was not a success.
I hear from others that atm Ceres is better than L’industrie
Ceres is a victim of Portnoy, now. They’re overcooking their pizza for “crunch” to appease the portnoy heads.

Ex:) they went to leopardo when they opened but didn’t make it to this year because it’s closed.
Probably my favorite Caesar salad right now. That dressing is amazing. We got the Riviera pizza special. How could we not? It’s a beautiful pie, but honestly, I think it’s too much as a whole pie. Probably works better as a slice in the omakase. As others said, there’s a lot going on. Each component is really good but the sum was taxing. Also, some bites were all onion and tuna without the other components. The onion is very sweet. There was no cut or acidity from the caper salsa verde or lemon zest. My suggestion is to use less caramelized onion and half the amount of tuna and better placement of the acidic ingredients. I do appreciate chef’s attempt here and look forward to more specials. Tiramisu to finish is a must. Cheers!

Has anybody tried walking into Una Pizza at 4 p.m.? I’ll be in NYC in a week.
They open at 5:00. There’s a recent report on Yelp from someone who got in line at 3:45 and was seated at 5:30.
Personally once was enough. I appreciated the quality and intense focus but Neapolitan-style is not my favorite.
