We were able to get a last minute reservation thankfully! Seemed like there was a decent amount of space reserved for walkups as the servers kept on going back to the kitchen to ask how long the estimate would be for tables. Seems they have a very well oiled machine.

That gardinera is the perfect foil. Sergio hasn’t been in the kitchen for some time, at least on my last 6 or so visits.
That bodes well for the second restaurant! Chef william seems to have been doing a lot of prep for the new resto and dough/dish R&D.
Sergio is very often “there” working in the back, but not “there” firing pies…

An appreciation for one of the best salumi plates in town,
The sliced to order meats, arugula/parmesan salad and carefully prepped bufala all play together beautifully. Impeccably seasoned and dressed. Lot of restaurants serving charcuterie in L.A. – few do it well.
Not sure when they shifted from pre-roasting the mushrooms to shaved raw cooked in situ but the latest Funghi Pizza is light, sharp and fresh with the earthy mushrooms playing against the confit garlic and pecorino. Perfect balance. Previous version was a little muddy.
Love the press for William and Sei but jeez she is an atrocious host or whatever you might call her. Her questions and comments are largely devoid of any substance, often just repeating a word or phrase that William said, or offering an un-insightful aside (“I would live on Mala Garden”). If I had to stretch for nice things to say, she had a select few interesting comments (eg comparing the crème fraiche to yogurt in a lamb taco) and she was universally positive.
She may have other talents (yes I know who she is) but this is not one of them.

I don’t think this lady deserves such pointed criticism (or any criticism really?). She’s letting William provide all the content, which is what good interviewers do. She seems like a normal person.
She’s a brash broad from Queens. That’s just her personality. Maybe amped up for performance.
She is a very nice and sweet person. One of the truly polite and nice celebrity behind the camera.
Brief and belated report from last Saturday. Pizzeria Sei is as good as ever. We had: tricolori salad, funghi and special margherita pizzas, side of prosciutto cotto. First time sitting at the counter and it’s my new favorite spot. Less traffic around you and I love watching the well oiled pizza making process. Plus l have a new appreciation of how many to go orders they push out.
My one quibble is I kind of wish they’d change up the menu once in a while or offer more specials. Bf can’t do spicy which eliminates several of the pizzas from contention, so we end up ordering these same two pizzas most of the time. These two very, very good pizzas, of course.
Pro tip: You can ask for the spicy to be “on the side” for some of those pies at Sei. I hope that gives him some more options!
