Rome recommendation?

Any life changing pastas or entree or signature dish I should try?

People saying I should try riscoli wonder how it is

I refuse to get recommendation on pizza…

Roscioli is uncomfortable and a bit of a tourist trap. They serve largely the same menu plus more a couple of blocks away at Emma, which is much nicer. Try the black truffle mortadella served on hot pizza bianca. Reservations essential.

If nobody told you to go to Da Remo in Testaccio you’re not getting the right local advice on pizza. Their prosciutto e melone (if in season) and visciola (sour cherry) tart are also great.

Trattoria Perilli is my favorite for carbonara and coda alla vaccinara. Reservations essential.

I’m going 180grammi pizzeria and seu illuminati pizzeria in Rome. They both crazy check out their Instagram.

But pizza critic friend in Italy recommended pantera garbatella, pizza chef roma, pizzeria sancho other than seu Illuminati and bonci

Bonci’s in a class by itself for pizza a taglio. Annoyingly out-of-the-way location.

You should try the pizza bianca at Forno Campo de’ Fiori. Maybe also at Antico Forno Roscioli (the bakery on Via dei Chiavari, not the deli / uncomfortable restaurant on Via del Giubbonari) if the line of tourists isn’t too long. They’re pretty similar though Roscioli is more of a sandwich shop / tourist trap. There’s a great essay about pizza bianca and Forno Campo de’ Fiori in Jeffrey Steingarten’s book “It Must’ve Been Something I Ate.”

As long as you’re in the neighborhood, Norcineria Viola (salumi shop on Campo de’ Fiori) is worth a visit.

Seu was on my list, didn’t manage to get there because of the location. And because we kept going back to Da Remo.

Apparently campo de fior has location in Naples and considered very good place to stop by.

Im just excited for seu because judging from video and couple pizzaiolo friends they are better than Pepe in grani in terms of dough and creativity

And owner is super nice and I might do pop up collab with them

Santo Palato if their new location is open when you go. Excellent and a steal for the price. Polpetta with lovage and peanut sauce is worth getting. Classic Roman pasta, of course.

An Italian acquaintance who works in fine dining recommended Pipero for our trip, but we did not end up having time to go.
