Glad to see Chez Panisse and Zuni Cafe given proper recognition. Unfortunately Zuni’s roast chicken is no longer Judy Rodgers’ classic, though otherwise the place is pretty much unchanged.
I went to Wildair (#79) the other night because it was a block from my hotel and open late on Sundays. While it was very good it didn’t seem like the kind of place that would end up on a list like that.
It’s good now but there was a time that it ushered in the wine bar with great food movement in NY and really really was a spot to be. Also for a while it was where popups and guest chefs were a norm and it incubated a lot of NY talent
