We’ve got the LA Times today saying restaurants can’t afford to be open; it’s impossible to make money in the restaurant industry.

Then we’ve got the Washington Post today saying restaurant owners are deciding not to sit tables of more than six people because it raises their cortisol levels.

The reason given for table size limits was $/sq ft/hour. Large parties order less per seat, because some of them came to join their friends, and aren’t into the food. And then the tables take longer to turn over - somebody shows up late, they all take longer to eat, and won’t leave after eating.

That’s why a lot of restaurants require a set menu for large parties.
