Hah! The directions for my green lentils say to cook for something like 30 mins, but I think I’m fine w/ them after 15 (using them for salad, so I want them to still hold their form).

Good to know when to salt (b/c I often forget to do it afterward).

Lots of articles and discussions around when to salt the beans. If you’re not in a rush then it doesn’t really matter. Some say that the skins start to peel if you salt too early. I put in salt at the start because I cook them for hours while I go on Zoom calls.

I salt early but hold back on tomatoes and other acids. Depending on age of the legumes and what they’re going to be used for, adding a sheet of kombu is supposed to soften the skins … I have never done that, though. Am thinking will try it the next time (you know, whenever it gets cool enough to have the stove on for hours) I make a pot of mixed bean soup.

I reaallly really like Chipotle’s queso. I order a burrito bowl without any rice, extra chips, and a large side of queso and I make nachos.

I can’t believe I haven’t thought of that!

I ate the whole bag, delicious :yum:

NICE!!! Although I find their chips to be horribly inconsistent!! It’s infuriating. I love Chipotle Bowls (Crenshaw location brings on the meats!) and often just supplement with my own bag of chips… But will have to try this hack…

YES. So annoying.

I actually like Starbucks’ overly sweet concoctions. I’m currently on a steamer/steamed milk kick. I get a grande with whole milk, five pumps of brown sugar syrup, and whipped cream. It’s like hot melted ice cream which is perfect for psychos like more who stick ice cream in the microwave.

I woke up out of a dead sleep last night . Grabbed my phone and ordered 2.3 pounds of 4 year aged Parmigiano reggiano from Bonat Farms .

Just came to read the confessions and didn’t plan on posting. But! Since we’re making Chipotle confessions… I like Chipotle’s Guacamole for all the reasons others probably don’t - it’s practically puréed & has no tomatoes.

There are no tomatoes in guacamole!

Nope. Not in Chipotle’s. The only reason I put tomatoes in mine is because peeps like it.

It deserved a “fucking YUCK!” imho.

That’s a pretty definitive statement; also dead wrong. Practically all the versions of guac I’ve had contain tomatoes. I just did a Google search for “guacamole recipe”, and the vast majority of recipes that come up have tomatoes as an ingredient. What makes you such an authority?

Yeah. Tomatoes are as essential to mexican food as corn and beans. In fact, people get more outradged when there is a huge spike in price of tomatoes. My Mom who grew up in both the Yucatan and the Capital, uses tomatoes in her guac. Guac at family restaurants in Mexico… there is tomato in the guac.
